Cayman Islands / Rum
Cayman simply doesn’t have the ‘rum culture’ familiar from other parts of the Caribbean. The soil and climate were not conducive to the establishment of sugar cane plantations, and the small size of the population did not allow large scale production of any agricultural products. One local business, the Tortuga Rum Company has over the last twenty years, established an international reputation for its rum cakes flavoured with alcohol, but the rum in question is produced and distilled elsewhere, principally in Jamaica and Barbados. Blackbeard’s is another highly successful Caymanian blender producing rum cakes, liquors and a range called ‘Big Black Dick’.
Grand Cayman
Seven Fathoms Rum is locally produced, and unusually, the premium product is aged underwater – hence the name. The rum is distilled at the Hammerheads Brewpub in George Town and then taken to a top secret location where the Caribbean waves turn the rum on the seabed to aid in maturation.
